Crock Pot Chili Con Carne Recipe

Ingredients

  • 3 Tbsp olive oil
  • 1 medium yellow onion, chopped
  • 1 green pepper, diced
  • 3 garlic cloves, crushed through a press
  • 1/4 cup chili powder
  • 1 Tbsp tomato paste
  • 2 (14.5 oz) cans stewed tomatoes
  • 1 jalepeno pepper, finely minced
  • 1 (15 oz) can red kidney beans, rinsed (optional)
  • 1 1/2 lbs. lean ground beef, crumbled and sauteed until browned, grease drained
  • Toppings:
  • 1 sweet onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream

Instructions

  1. Heat the oil in a 3-quart saucepan over medium heat.
  2. Add the yellow onion, green pepper and garlic and saute until softened, about 5 minutes.
  3. Add the chili powder and tomato paste and saute until rust colored.
  4. Spoon the mixture into a 3 1/2 - 4 quart slow cooker.
  5. Add the tomatoes, jalapeno, beans and beef and mix well.
  6. Cover and cook until the meat is tender and the mixture is juicy but not thin, on low power 6 - 8 hours or on high power 3 - 4 hours.
  7. Serve with the toppings as desired.
