Crock Pot Chili Con Carne Recipe
Ingredients
- 3 Tbsp olive oil
- 1 medium yellow onion, chopped
- 1 green pepper, diced
- 3 garlic cloves, crushed through a press
- 1/4 cup chili powder
- 1 Tbsp tomato paste
- 2 (14.5 oz) cans stewed tomatoes
- 1 jalepeno pepper, finely minced
- 1 (15 oz) can red kidney beans, rinsed (optional)
- 1 1/2 lbs. lean ground beef, crumbled and sauteed until browned, grease drained
- Toppings:
- 1 sweet onion, chopped
- 2 cups shredded cheddar cheese
- 1 cup sour cream
Instructions
- Heat the oil in a 3-quart saucepan over medium heat.
- Add the yellow onion, green pepper and garlic and saute until softened, about 5 minutes.
- Add the chili powder and tomato paste and saute until rust colored.
- Spoon the mixture into a 3 1/2 - 4 quart slow cooker.
- Add the tomatoes, jalapeno, beans and beef and mix well.
- Cover and cook until the meat is tender and the mixture is juicy but not thin, on low power 6 - 8 hours or on high power 3 - 4 hours.
- Serve with the toppings as desired.
