Pasta with Beans and Greens

Ingredients

  • 8 ounces Bow tie pasta (farfalle) Uncooked
  • 1 Onion large Chopped
  • 8 ounces Fresh mushrooms Sliced
  • 4 cups Kale or spinach Chopped
  • 1 Cup Chicken broth
  • 1 teaspoon Garlic Minced
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 can Nothern beans Rinsed and drained
  • 1/4 cup Parmesan cheese grated
  • 2 Cups Ground turkey

Instructions

  1. Cook pasta according to package instructions. Drain. Place pasta in large bowl ; set aside.
  2. Cook turkey in skillet, drain and return to skillet.
  3. Meanwhile, sauté onion and mushrooms in hot oil in large skillet over medium heat for 5 minutes. Add spinach and next four ingredients; cook, stirring often. 10 minutes or until spinach is tender. Stir in beans and cook one minute.
  4. Add bean mixture to pasta; toss gently. Sprinkle with cheese, serve immediately.
