Pasta with Beans and Greens
Ingredients
- 8 ounces Bow tie pasta (farfalle) Uncooked
- 1 Onion large Chopped
- 8 ounces Fresh mushrooms Sliced
- 4 cups Kale or spinach Chopped
- 1 Cup Chicken broth
- 1 teaspoon Garlic Minced
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 can Nothern beans Rinsed and drained
- 1/4 cup Parmesan cheese grated
- 2 Cups Ground turkey
Instructions
- Cook pasta according to package instructions. Drain. Place pasta in large bowl ; set aside.
- Cook turkey in skillet, drain and return to skillet.
- Meanwhile, sauté onion and mushrooms in hot oil in large skillet over medium heat for 5 minutes. Add spinach and next four ingredients; cook, stirring often. 10 minutes or until spinach is tender. Stir in beans and cook one minute.
- Add bean mixture to pasta; toss gently. Sprinkle with cheese, serve immediately.
