Keto Chili
Ingredients
- 1 lb Ground chuck Use 73/27 if you’re struggling to get your fat in.
- 1/2 each Onion Chopped Small 4g Carbs
- 2-4 cloves Garlic Chopped 2g-4g Carbs
- 1 can Diced tomatoes 15g Carbs
- 0-.5 can Green Chilies (Optional)
- .5 can Tomato Paste 12g Carbs
- 1-2 tbsp Cumin
- 2-4 tbsp Chili powder
- 1-2 tsp Dried oregano
- 1 tsp Salt To taste
- 1 tsp Black pepper To taste
- 1 each Bay leaf
- 1 tsp Xantham Gum Optional, for thickening.
- 1 tbsp Olive oil Optional, for thickening.
- 1 cup Beef Bone Broth/Stock
- 1 tbsp Coco Powder
- 1 tbsp Fish Sauce TRUST ME! (You can opt for Worcestershire sauce if you’re scared.)
Instructions
- 1.) Turn your instant pot to saute.
- 2.) Chop your aromatics. (Make sure the onions are chopped pretty fine, that will help give texture and thickness to the chili.)
- 3.) Make your secret sauce by combining the ingredients in a small bowl/liquid measuring cup.
- 3.) Brown your ground beef in the instant pot.
- 4.) Once the beef is mostly browned and the fats have rendered, use a slotted spoon to remove the beef to a bowl, keeping the rendered fat.
- 5.) Add the onions to the beef fat and cook until they turn clear. (5min or so)
- 6.) Add the garlic and allow it to cook until fragrant. (2 min or so)
- 7.) Add the cumin, chili powder, dried oregano to the onion garlic mixture, and cook while stirring constantly until fragrant. (2 min or so)
- 8.) Add the secret sauce to deglaze the bottom. (Make sure to use your stirring device to get everything unstuck from the bottom. That’s all flavor.)
- 9.) Add the ground beef, combining thoroughly.
- 10.) Add the tomato paste, combining thoroughly.
- 11.) Add the diced tomatoes and bay leaf. (And green chilies if using.)
- 12.) Give a quick stir.
- 13.) Put on lid of instant pot, sealing the valve. Set it on high for 30 min.
- 14.) Allow to naturally release if time allows 30 min or so. Otherwise turn the valve to release pressure.
- 15.) If the chili is to thin for your tastes: In a separate bowl add your Xantham Gum and Olive oil and mix thoroughly. Stir the mixture into the chili and let it set for a couple minutes. (Repeat if to thin still.)
