Keto Chili

Ingredients

  • 1 lb Ground chuck Use 73/27 if you’re struggling to get your fat in.
  • 1/2 each Onion Chopped Small 4g Carbs
  • 2-4 cloves Garlic Chopped 2g-4g Carbs
  • 1 can Diced tomatoes 15g Carbs
  • 0-.5 can Green Chilies (Optional)
  • .5 can Tomato Paste 12g Carbs
  • 1-2 tbsp Cumin
  • 2-4 tbsp Chili powder
  • 1-2 tsp Dried oregano
  • 1 tsp Salt To taste
  • 1 tsp Black pepper To taste
  • 1 each Bay leaf
  • 1 tsp Xantham Gum Optional, for thickening.
  • 1 tbsp Olive oil Optional, for thickening.
  • 1 cup Beef Bone Broth/Stock
  • 1 tbsp Coco Powder
  • 1 tbsp Fish Sauce TRUST ME! (You can opt for Worcestershire sauce if you’re scared.)

Instructions

  1. 1.) Turn your instant pot to saute.
  2. 2.) Chop your aromatics. (Make sure the onions are chopped pretty fine, that will help give texture and thickness to the chili.)
  3. 3.) Make your secret sauce by combining the ingredients in a small bowl/liquid measuring cup.
  4. 3.) Brown your ground beef in the instant pot.
  5. 4.) Once the beef is mostly browned and the fats have rendered, use a slotted spoon to remove the beef to a bowl, keeping the rendered fat.
  6. 5.) Add the onions to the beef fat and cook until they turn clear. (5min or so)
  7. 6.) Add the garlic and allow it to cook until fragrant. (2 min or so)
  8. 7.) Add the cumin, chili powder, dried oregano to the onion garlic mixture, and cook while stirring constantly until fragrant. (2 min or so)
  9. 8.) Add the secret sauce to deglaze the bottom. (Make sure to use your stirring device to get everything unstuck from the bottom. That’s all flavor.)
  10. 9.) Add the ground beef, combining thoroughly.
  11. 10.) Add the tomato paste, combining thoroughly.
  12. 11.) Add the diced tomatoes and bay leaf. (And green chilies if using.)
  13. 12.) Give a quick stir.
  14. 13.) Put on lid of instant pot, sealing the valve. Set it on high for 30 min.
  15. 14.) Allow to naturally release if time allows 30 min or so. Otherwise turn the valve to release pressure.
  16. 15.) If the chili is to thin for your tastes: In a separate bowl add your Xantham Gum and Olive oil and mix thoroughly. Stir the mixture into the chili and let it set for a couple minutes. (Repeat if to thin still.)
